Whole Wheat Cornbread With Flax & Syrup

Ingredients
- Servings: 8
- 1 1/4 cups whole wheat flour
- 3/4 cup cornmeal
- 3 tablespoons sugar
- 2 teaspoons baking powder
- 1 teaspoon baking soda
- 1 tablespoon egg substitute
- 1/2 teaspoon salt
- 3 tablespoons freshly ground flax seeds
- 1 tablespoon brown rice syrup or 1 tablespoon maple syrup
- 1 1/8 cups soymilk
Recipe
- 1 mix dry ingredients first.
- 2 heat soy milk, flax, and syrup together over low heat for ~10 minutes
- 3 combine & mix.
- 4 roll into a simple loaf.
- 5 bake on lightly oiled pan or pizza stone at 375 for ~50 minutes, cover loosely with foil for the first 1/2 hour.
