Whole Wheat Cornbread With Flax & Syrup

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • Servings: 8
  • 1 1/4 cups whole wheat flour
  • 3/4 cup cornmeal
  • 3 tablespoons sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon egg substitute
  • 1/2 teaspoon salt
  • 3 tablespoons freshly ground flax seeds
  • 1 tablespoon brown rice syrup or 1 tablespoon maple syrup
  • 1 1/8 cups soymilk

Recipe

  • 1 mix dry ingredients first.
  • 2 heat soy milk, flax, and syrup together over low heat for ~10 minutes
  • 3 combine & mix.
  • 4 roll into a simple loaf.
  • 5 bake on lightly oiled pan or pizza stone at 375 for ~50 minutes, cover loosely with foil for the first 1/2 hour.
