Turkey, Rice And Cantaloupe Salad

Total Time: 2 hrs 20 mins Preparation Time: 20 mins Cook Time: 2 hrs

Ingredients

  • Servings: 4
  • 3 cups cooked rice, cooled to room temperature
  • 2 cups diced cantaloupes
  • 1 1/2 cups cooked turkey, cubed
  • 1/4 cup tightly packed mint leaf
  • 1/4 cup tightly packed parsley
  • 1 clove garlic, halved
  • 8 ounces plain nonfat yogurt
  • lettuce leaf
  • fresh fruit (to garnish) (optional)

Recipe

  • 1 combine rice, cantaloupe and turkey in large bowl.
  • 2 finely chop mint, parsley and garlic in food processor.
  • 3 add yogurt and blend.
  • 4 add to rice mixture; toss lightly.
  • 5 cover and chill 2 hours.
  • 6 serve on lettuce leaves.
  • 7 garnish with fresh fruit.
