Zucchini-vermicelli Toss

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 8 ounces vermicelli
  • 12 ounces shredded zucchini
  • 2 tablespoons olive oil
  • 3 tablespoons parmesan cheese
  • 1 teaspoon lemon juice
  • 2 cloves garlic (minced or pressed, your choice)
  • salt and pepper

Recipe

  • 1 boil large pot of water.
  • 2 add some salt to the water and boil pasta.
  • 3 2 minutes before pasta is done, add shredded zucchini to pot and cook with the pasta until pasta is cooked.
  • 4 drain in a colander.
  • 5 while pasta is cooking, heat oil in a small skillet over medium heat.
  • 6 add garlic and cook until just starting to turn golden.
  • 7 mix pasta and zucchini, olive oil and garlic and remaining ingredients in a pasta bowl.
  • 8 toss to coat and serve immediately.
