Sofie's Pasta With Fresh Sauce

Ingredients

- 1 lb fresh pasta
- 3 lbs fresh tomatoes
- 2 tablespoons capers
- 1 onion
- 3 tablespoons olive oil
- 1 bunch fresh broccoli
- 1/4 cup fresh basil
- 1/2 lb fresh soft mozzarella cheese
- 1/4 teaspoon chili, pieces
- 1/2 cup fresh parmesan cheese
- 1/2 teaspoon oregano
- 1/2 cup dry wine
- salt and pepper
Recipe
- 1 put salted water on to boil for the pasta.
- 2 peel and slice onions. caramelize in sauté pan in the olive oil.
- 3 chop broccoli into 1" pieces.
- 4 chop tomatoes into 1" pieces.
- 5 add tomatoes, chili, wine, salt, pepper, and oregano to the mix. simmer until the tomatoes are getting soft. if there isn't' enough liquid, you can add water or broth.
- 6 add broccoli and capers. put a lid on the pot and good until tender, but still green, watching that the pan doesnt' go dry.
- 7 when you add the broccoli is a good time to put the pasta in boiling water and cook following package directions.
- 8 to serve, put pasta on plate, cover with sauce, add a slice of fresh mozzarella and some grated parmesan.
