Sofie's Pasta With Fresh Sauce

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb fresh pasta
  • 3 lbs fresh tomatoes
  • 2 tablespoons capers
  • 1 onion
  • 3 tablespoons olive oil
  • 1 bunch fresh broccoli
  • 1/4 cup fresh basil
  • 1/2 lb fresh soft mozzarella cheese
  • 1/4 teaspoon chili, pieces
  • 1/2 cup fresh parmesan cheese
  • 1/2 teaspoon oregano
  • 1/2 cup dry wine
  • salt and pepper

Recipe

  • 1 put salted water on to boil for the pasta.
  • 2 peel and slice onions. caramelize in sauté pan in the olive oil.
  • 3 chop broccoli into 1" pieces.
  • 4 chop tomatoes into 1" pieces.
  • 5 add tomatoes, chili, wine, salt, pepper, and oregano to the mix. simmer until the tomatoes are getting soft. if there isn't' enough liquid, you can add water or broth.
  • 6 add broccoli and capers. put a lid on the pot and good until tender, but still green, watching that the pan doesnt' go dry.
  • 7 when you add the broccoli is a good time to put the pasta in boiling water and cook following package directions.
  • 8 to serve, put pasta on plate, cover with sauce, add a slice of fresh mozzarella and some grated parmesan.
