Springtime Penne

Total Time: 55 mins Preparation Time: 45 mins Cook Time: 10 mins

Ingredients

  • Servings: 8
  • 3 cups uncooked penne pasta
  • 1 lb fresh asparagus, trimmed and cut into 1-inch pieces
  • 1 large onion, chopped
  • 1/4 cup butter, cubed
  • 1/2 lb cubed cooked ham
  • 1/2 cup heavy whipping cream
  • 1/4 teaspoon pepper, to taste
  • salt, to taste

Recipe

  • 1 cook pasta according to package directions.
  • 2 meanwhile, in a large skillet, saute asparagus and onion in butter for 5-8 minutes or until asparagus is crisp-tender.
  • 3 add in the ham, cream, pepper, and salt; bring to a boil.
  • 4 reduce heat; cook over low heat for 1 minute.
  • 5 drain pasta; add to the asparagus mixture; toss to coat.
