Ingredients

- 1 tablespoon margarine
- 1 onion, chopped
- 2 cups rice, cooked and cooled
- 1/2 cup unsweetened pineapple chunks
- 1 tablespoon soy sauce
- 1/2 medium serrano chili, seeded and finely chopped
- 4 ounces shrimp, peeled and deveined
- 2 tablespoons cilantro, chopped
Recipe
- 1 melt margarine in a large skillet.
- 2 add onions; cook until tender, about 2 minutes.
- 3 add rice; cook over medium heat for 2 minutes.
- 4 add remaining ingredients; cook until heated through and shrimp are done, about 6 minutes more.
