Tomatoes, Mozzarella & Basil Sauce Over Pasta

Ingredients
- Servings: 4
- 3 large tomatoes, peeled, seeded, chopped
- 4 ounces fresh mozzarella balls, cut into 1/4
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon red wine vinegar
- 1 tablespoon fresh basil or 1 teaspoon dried basil
- 2 green onions, chopped
- 1 garlic, minced
- 1 teaspoon fresh oregano or 1/4 teaspoon dried oregano
- salt and pepper
- pasta, cooked (any type)
- prawns, cooked (optional)
- cilantro (optional)
Recipe
- 1 combine all the ingredients and let set at room temperature for flavours to mingle.
- 2 cook pasta and toss with sauce.
