Tomatoes, Mozzarella & Basil Sauce Over Pasta

Total Time: 40 mins Preparation Time: 30 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 3 large tomatoes, peeled, seeded, chopped
  • 4 ounces fresh mozzarella balls, cut into 1/4
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon red wine vinegar
  • 1 tablespoon fresh basil or 1 teaspoon dried basil
  • 2 green onions, chopped
  • 1 garlic, minced
  • 1 teaspoon fresh oregano or 1/4 teaspoon dried oregano
  • salt and pepper
  • pasta, cooked (any type)
  • prawns, cooked (optional)
  • cilantro (optional)

Recipe

  • 1 combine all the ingredients and let set at room temperature for flavours to mingle.
  • 2 cook pasta and toss with sauce.
