Tomato-spinach Barley

Ingredients
- Servings: 6
- 8 ounces dry quick-cooking barley
- 2 teaspoons butter
- 1 garlic clove, minced
- 1/3 cup onion, finely chopped
- 4 cups fresh spinach, chopped
- 1 cup tomato, seeded and diced
- salt and pepper
Recipe
- 1 cook barley in a saucepan according to package directions. drain barley and remove from pan.
- 2 in the same saucepan, saute onion and garlic in butter til soft. add the barley, spinach and tomato and cook til spinach wilts.
- 3 season with salt and pepper.
