Tomato-spinach Barley

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 8 ounces dry quick-cooking barley
  • 2 teaspoons butter
  • 1 garlic clove, minced
  • 1/3 cup onion, finely chopped
  • 4 cups fresh spinach, chopped
  • 1 cup tomato, seeded and diced
  • salt and pepper

Recipe

  • 1 cook barley in a saucepan according to package directions. drain barley and remove from pan.
  • 2 in the same saucepan, saute onion and garlic in butter til soft. add the barley, spinach and tomato and cook til spinach wilts.
  • 3 season with salt and pepper.
