Tuscan Pasta Sauce

Ingredients

- 3 tablespoons vegetable oil
- 1 red onion, diced
- 1 shallot, minced
- 2 garlic cloves, minced
- 1 cup wine
- 1 (28 ounce) can diced tomatoes, drained
- 1 1/2 cups whipping cream
- 1/3 cup kalamata olive, coarsely chopped
- 1/4 cup capers
- kosher salt
- black pepper
Recipe
- 1 in a skillet, heat the oil over medium heat.
- 2 cook the onion and shallot until soft and translucent, about 7 minutes.
- 3 add the garlic and continue cooking for 1 additional minute.
- 4 add the wine and simmer until reduced by half, about 4 minutes.
- 5 add the tomatoes and simmer for 20 minutes.
- 6 add the cream, olives and capers and simmer for about 7 minutes.
- 7 adjust seasoning to taste.
- 8 serve over your favourite pasta!
