Tuscan Pasta Sauce

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 3 tablespoons vegetable oil
  • 1 red onion, diced
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • 1 cup wine
  • 1 (28 ounce) can diced tomatoes, drained
  • 1 1/2 cups whipping cream
  • 1/3 cup kalamata olive, coarsely chopped
  • 1/4 cup capers
  • kosher salt
  • black pepper

Recipe

  • 1 in a skillet, heat the oil over medium heat.
  • 2 cook the onion and shallot until soft and translucent, about 7 minutes.
  • 3 add the garlic and continue cooking for 1 additional minute.
  • 4 add the wine and simmer until reduced by half, about 4 minutes.
  • 5 add the tomatoes and simmer for 20 minutes.
  • 6 add the cream, olives and capers and simmer for about 7 minutes.
  • 7 adjust seasoning to taste.
  • 8 serve over your favourite pasta!
