Unbelievable Clams And Garlic

Ingredients
- Servings: 4
- 50 small clams in shell, scrubbed
- 2 tablespoons extra virgin olive oil
- 6 cloves garlic, minced
- 1 cup wine
- 2 tablespoons butter
- 1/2 lemon, juice of
- 1 pinch hot pepper flakes
- 1/2 cup chopped fresh parsley
Recipe
- 1 wash clams to remove any dirt or sand.
- 2 in a large pot, heat oil over medium heat.
- 3 add garlic; saute for 1 minute, or until tender.
- 4 pour in the wine.
- 5 boil until wine has reduced to half its original volume.
- 6 add clams, cover, and steam till clams start to open.
- 7 add butter,lemon and red pepper flakes, cover, and cook till most or all of the clams open.
- 8 discard any that do not open.
- 9 transfer clams and juice to large bowls.
- 10 sprinkle with parsley.
- 11 serve with warm crusty bread for dipping or on top of pasta!
