Unbelievable Clams And Garlic

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 50 small clams in shell, scrubbed
  • 2 tablespoons extra virgin olive oil
  • 6 cloves garlic, minced
  • 1 cup wine
  • 2 tablespoons butter
  • 1/2 lemon, juice of
  • 1 pinch hot pepper flakes
  • 1/2 cup chopped fresh parsley

Recipe

  • 1 wash clams to remove any dirt or sand.
  • 2 in a large pot, heat oil over medium heat.
  • 3 add garlic; saute for 1 minute, or until tender.
  • 4 pour in the wine.
  • 5 boil until wine has reduced to half its original volume.
  • 6 add clams, cover, and steam till clams start to open.
  • 7 add butter,lemon and red pepper flakes, cover, and cook till most or all of the clams open.
  • 8 discard any that do not open.
  • 9 transfer clams and juice to large bowls.
  • 10 sprinkle with parsley.
  • 11 serve with warm crusty bread for dipping or on top of pasta!
