Whole Wheat Pasta With Spinach, Mushrooms, And Tomatoes

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 8 ounces whole wheat pasta (i used penne)
  • 1 tablespoon olive oil
  • 1 cup sliced fresh mushrooms
  • 6 garlic cloves, minced
  • 2 tomatoes, diced
  • 2 teaspoons italian seasoning
  • 1 cup cooked diced chicken
  • 4 cups fresh spinach, coarsely chopped
  • salt and pepper
  • freshly grated parmesan cheese or crumbled feta

Recipe

  • 1 cook pasta as directed, al dente. drain when done and return to pan.
  • 2 in a large sauce pan, heat oil to medium and saute mushrooms and garlic.
  • 3 add tomatoes, chicken, and italian seasoning and simmer an additional 2 minutes.
  • 4 add fresh spinach and cooked pasta.
  • 5 add salt and pepper as desired.
  • 6 heat through and serve immediately topping with parmesan or feta.
  • 7 (you could also use raw diced chicken and cook that first instead of using the cooked chicken.).
