Tuna Rice Salad

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 3 cups cooked rice
  • 1 (7 ounce) can flaked tuna, drained
  • 4 boild eggs (chop 2, other 2 cut into quarters set aside)
  • 1/2 cup cooked peas
  • 3 tomatoes (sliced into quarters, set one of the tometoes aside)
  • 1 onion (finely chopped)
  • 1/2 olive
  • salt and pepper
  • 1 tablespoon capers (optional)
  • 1/4 cup olive oil (or less and vinegar to season)

Recipe

  • 1 combine rice, with all the ingredients below. rememering to set aside the 2 eggs, and tomaoe.
  • 2 toss everything together taste for seasoning. place in a caserole glass dish (it looks more appealing.
  • 3 decorate with the remaining eggs and tomotes all around the dish, with some of the olives also.
  • 4 you may have this salad warm in the winter and cold in the summer.
