Tuna Rice Salad

Ingredients
- Servings: 4
- 3 cups cooked rice
- 1 (7 ounce) can flaked tuna, drained
- 4 boild eggs (chop 2, other 2 cut into quarters set aside)
- 1/2 cup cooked peas
- 3 tomatoes (sliced into quarters, set one of the tometoes aside)
- 1 onion (finely chopped)
- 1/2 olive
- salt and pepper
- 1 tablespoon capers (optional)
- 1/4 cup olive oil (or less and vinegar to season)
Recipe
- 1 combine rice, with all the ingredients below. rememering to set aside the 2 eggs, and tomaoe.
- 2 toss everything together taste for seasoning. place in a caserole glass dish (it looks more appealing.
- 3 decorate with the remaining eggs and tomotes all around the dish, with some of the olives also.
- 4 you may have this salad warm in the winter and cold in the summer.
