Robin Miller's Neapolitan Eggplant Parmesan

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • 1 eggplant, roasted and sliced
  • 1 (28 ounce) can spicy pasta sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese
  • 1/4 cup chopped fresh basil leaf

Recipe

  • 1 preheat oven to 400°f coat a lare baking sheet with pam.
  • 2 arrange eggplant slices on prepared baking sheet.
  • 3 top each slice with an equal amount of sauce and then top with mozzarella and parmesan.
  • 4 bake 8 - 10 minutes, until cheese is bubbly.
  • 5 top with basil before serving.
