Robin Miller's Neapolitan Eggplant Parmesan

Ingredients
- 1 eggplant, roasted and sliced
- 1 (28 ounce) can spicy pasta sauce
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1/4 cup chopped fresh basil leaf
Recipe
- 1 preheat oven to 400°f coat a lare baking sheet with pam.
- 2 arrange eggplant slices on prepared baking sheet.
- 3 top each slice with an equal amount of sauce and then top with mozzarella and parmesan.
- 4 bake 8 - 10 minutes, until cheese is bubbly.
- 5 top with basil before serving.
