Taco Beef And Rice Pie

Total Time: 1 hr 30 mins Preparation Time: 30 mins Cook Time: 1 hr

Ingredients

  • Servings: 4
  • 2 cups beef broth
  • 1 cup rice
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 2 eggs, beaten
  • 1 lb ground beef
  • 1 garlic clove, crushed
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/2 cup taco sauce
  • 1 egg, beaten
  • 1 avocado, mashed
  • 1 tablespoon onion, chopped
  • 1 tablespoon taco sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon lemon juice

Recipe

  • 1 taco pie crust.
  • 2 in a sauce pan bring broth, butter and salt to a boil.
  • 3 add rice, cover, turn to low and cook for 20 minutes.
  • 4 cool rice slightly, add eggs mix well.
  • 5 press mixture into a 9 inch greased pie plate, going up sides.
  • 6 set aside.
  • 7 taco pie filling.
  • 8 brown ground beef, drain fat.
  • 9 stir in garlic, cumin and salt, cook 2 minutes longer.
  • 10 remove from heat, stir in taco sauce, egg.
  • 11 spoon into prepared rice pie shell.
  • 12 bake at 350 degrees for 25 minutes.
  • 13 taco pie topping.
  • 14 while pie is cooking, mash avocado together with onion, taco sauce, salt and lemon juice.
  • 15 when beef pie has cooked the 25 minutes, spread avocado mixture over the top and cook another 5 minutes.
  • 16 serve.
  • 17 *optional items green chillis, grated cheese.
