Taco Beef And Rice Pie

Ingredients

- 2 cups beef broth
- 1 cup rice
- 1 tablespoon butter
- 1 teaspoon salt
- 2 eggs, beaten
- 1 lb ground beef
- 1 garlic clove, crushed
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/2 cup taco sauce
- 1 egg, beaten
- 1 avocado, mashed
- 1 tablespoon onion, chopped
- 1 tablespoon taco sauce
- 1/2 teaspoon salt
- 1/2 teaspoon lemon juice
Recipe
- 1 taco pie crust.
- 2 in a sauce pan bring broth, butter and salt to a boil.
- 3 add rice, cover, turn to low and cook for 20 minutes.
- 4 cool rice slightly, add eggs mix well.
- 5 press mixture into a 9 inch greased pie plate, going up sides.
- 6 set aside.
- 7 taco pie filling.
- 8 brown ground beef, drain fat.
- 9 stir in garlic, cumin and salt, cook 2 minutes longer.
- 10 remove from heat, stir in taco sauce, egg.
- 11 spoon into prepared rice pie shell.
- 12 bake at 350 degrees for 25 minutes.
- 13 taco pie topping.
- 14 while pie is cooking, mash avocado together with onion, taco sauce, salt and lemon juice.
- 15 when beef pie has cooked the 25 minutes, spread avocado mixture over the top and cook another 5 minutes.
- 16 serve.
- 17 *optional items green chillis, grated cheese.
