Thai Rice

Ingredients

- 1 tablespoon olive oil
- 2 cups onions, chopped
- 1 tablespoon lemongrass, peeled and finely chopped
- 1 teaspoon fresh ginger, peeled and finely chopped
- 1/4 teaspoon ground coriander
- 1/4 teaspoon ground cumin
- 1 cup brown basmati rice
- 2 3/4 cups low sodium chicken broth
- 1 teaspoon lime rind, grated
- 1/4 teaspoon salt
- 1/4 cup fresh cilantro, chopped
- 6 lime wedges
Recipe
- 1 heat oil in large nonstick skillet over med high.
- 2 add onion and next 4 ingredients; saute 3 min or til onion is tender.
- 3 add rice; saute 1 minute.
- 4 stir in broth, rind and salt; bring to a boil.
- 5 cover, reduce heat and simmer 45 min or til rice is tender.
- 6 remove from heat and let stand 10 minute.
- 7 stir in cilantro.
- 8 serve with lime wedges.
