Thai Rice

Total Time: 1 hr 5 mins Preparation Time: 10 mins Cook Time: 55 mins

Ingredients

  • Servings: 6
  • 1 tablespoon olive oil
  • 2 cups onions, chopped
  • 1 tablespoon lemongrass, peeled and finely chopped
  • 1 teaspoon fresh ginger, peeled and finely chopped
  • 1/4 teaspoon ground coriander
  • 1/4 teaspoon ground cumin
  • 1 cup brown basmati rice
  • 2 3/4 cups low sodium chicken broth
  • 1 teaspoon lime rind, grated
  • 1/4 teaspoon salt
  • 1/4 cup fresh cilantro, chopped
  • 6 lime wedges

Recipe

  • 1 heat oil in large nonstick skillet over med high.
  • 2 add onion and next 4 ingredients; saute 3 min or til onion is tender.
  • 3 add rice; saute 1 minute.
  • 4 stir in broth, rind and salt; bring to a boil.
  • 5 cover, reduce heat and simmer 45 min or til rice is tender.
  • 6 remove from heat and let stand 10 minute.
  • 7 stir in cilantro.
  • 8 serve with lime wedges.
