The Best Ever Brown Rice Salad

Ingredients
- Servings: 6
- 1 1/2 cups brown rice
- 1 red bell pepper, chopped
- 3 spring onions, chopped
- 3 tablespoons parsley, finely chopped
- 1 1/2 cups cashew nuts
- 1 lemon, juice of
- 5 tablespoons extra virgin olive oil
- 1 teaspoon balsamic vinegar
- 1 teaspoon worcestershire sauce
- 1/4 cup sultana (optional)
- 1 tablespoon pine nuts (optional)
Recipe
- 1 place the lemon juice, olive oil, vinegar and worcestershire sauce in a screw top jar and shake well.
- 2 cook the brown rice acording to the packet instructions, drain and place in a bowl. while the rice is still warm, mix in all the other ingredients including the dressing, stir thoroughly.
- 3 serve at room temperature.
