The Best Ever Brown Rice Salad

Ingredients

  • Servings: 6
  • 1 1/2 cups brown rice
  • 1 red bell pepper, chopped
  • 3 spring onions, chopped
  • 3 tablespoons parsley, finely chopped
  • 1 1/2 cups cashew nuts
  • 1 lemon, juice of
  • 5 tablespoons extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon worcestershire sauce
  • 1/4 cup sultana (optional)
  • 1 tablespoon pine nuts (optional)

Recipe

  • 1 place the lemon juice, olive oil, vinegar and worcestershire sauce in a screw top jar and shake well.
  • 2 cook the brown rice acording to the packet instructions, drain and place in a bowl. while the rice is still warm, mix in all the other ingredients including the dressing, stir thoroughly.
  • 3 serve at room temperature.
