Ultimate Macaroni And Cheese

Total Time: 50 mins Preparation Time: 30 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 8 ounces cavatappi pasta or 8 ounces macaroni
  • 1/4 teaspoon kosher salt
  • 2 tablespoons unsalted butter
  • 1/2 cup shallot, finely chopped
  • 2 tablespoons all-purpose flour
  • 1 1/4 cups dry wine
  • 2/3 cup half-and-half
  • 7 ounces gruyere, grated
  • 3 ounces gouda cheese, grated
  • 1 tablespoon dijon mustard
  • 1/8 teaspoon cayenne
  • 1/8 teaspoon nutmeg
  • 1 1/2 tablespoons butter
  • 1/4 teaspoon kosher salt
  • 4 ounces sourdough bread, torn into large pieces

Recipe

  • 1 boil pasta according to package directions.
  • 2 in frying pan, saute shallots in butter until light golden.
  • 3 sprinkle with flour- stirring til well mixed.
  • 4 add wine and stir.
  • 5 add cream and stir well.
  • 6 add mustard, cayenne and nutmeg.
  • 7 sprinkle in cheese, one large handful at a time.
  • 8 stir in cooked pasta and mix well.
  • 9 pour into a 2-qt baking dish.
  • 10 topping- in food processor, put in all ingredients and pulse til well mixed.
  • 11 sprinkle on top of pasta.
  • 12 bake at 400 degrees 20 minutes- til topping is brown and cheese is bubbling.
