Ultimate Macaroni And Cheese

Ingredients

- 8 ounces cavatappi pasta or 8 ounces macaroni
- 1/4 teaspoon kosher salt
- 2 tablespoons unsalted butter
- 1/2 cup shallot, finely chopped
- 2 tablespoons all-purpose flour
- 1 1/4 cups dry wine
- 2/3 cup half-and-half
- 7 ounces gruyere, grated
- 3 ounces gouda cheese, grated
- 1 tablespoon dijon mustard
- 1/8 teaspoon cayenne
- 1/8 teaspoon nutmeg
- 1 1/2 tablespoons butter
- 1/4 teaspoon kosher salt
- 4 ounces sourdough bread, torn into large pieces
Recipe
- 1 boil pasta according to package directions.
- 2 in frying pan, saute shallots in butter until light golden.
- 3 sprinkle with flour- stirring til well mixed.
- 4 add wine and stir.
- 5 add cream and stir well.
- 6 add mustard, cayenne and nutmeg.
- 7 sprinkle in cheese, one large handful at a time.
- 8 stir in cooked pasta and mix well.
- 9 pour into a 2-qt baking dish.
- 10 topping- in food processor, put in all ingredients and pulse til well mixed.
- 11 sprinkle on top of pasta.
- 12 bake at 400 degrees 20 minutes- til topping is brown and cheese is bubbling.
