Whole Wheat Pasta With Veggies And Ricotta

Ingredients
- 2 ounces whole wheat penne
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 teaspoon olive oil
- 1 cup frozen broccoli
- 3 italian tomatoes, diced
- 1/4 cup part-skim ricotta cheese
- 1/4 teaspoon salt
- 1 tablespoon parmesan cheese, grated
- 1/2 teaspoon crushed red pepper flakes
- 1/2 teaspoon italian seasoning
Recipe
- 1 saute onions in olive oil over medium heat.
- 2 add garlic, salt, pepper flakes, and italian seasoning when onions turn translucent.
- 3 add tomatoes and frozen broccoli, cook until tomatoes are softened.
- 4 meanwhile boil pasta water and cook penne until al dente.
- 5 transfer pasta to sauce pan with vegetables and add ricotta.
- 6 gently toss to combine and finish with parmesean.
