Whole Wheat Pasta With Veggies And Ricotta

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 2 ounces whole wheat penne
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 teaspoon olive oil
  • 1 cup frozen broccoli
  • 3 italian tomatoes, diced
  • 1/4 cup part-skim ricotta cheese
  • 1/4 teaspoon salt
  • 1 tablespoon parmesan cheese, grated
  • 1/2 teaspoon crushed red pepper flakes
  • 1/2 teaspoon italian seasoning

Recipe

  • 1 saute onions in olive oil over medium heat.
  • 2 add garlic, salt, pepper flakes, and italian seasoning when onions turn translucent.
  • 3 add tomatoes and frozen broccoli, cook until tomatoes are softened.
  • 4 meanwhile boil pasta water and cook penne until al dente.
  • 5 transfer pasta to sauce pan with vegetables and add ricotta.
  • 6 gently toss to combine and finish with parmesean.
