Zesty Chicken And Broccoli Pasta

Ingredients
- 200 g penne pasta
- 2 tablespoons olive oil
- 1 garlic clove, peeled and crushed
- 40 g breadcrumbs, stale ciabatta
- 1 lemon zest
- 250 g baby plum tomatoes, halved
- 2 cooked chicken breasts, torn into strips
- 250 g broccoli florets, roughly chopped
- 2 tablespoons parmesan cheese, finely grated
Recipe
- 1 cook the pasta according to pack instructions. meanwhile, heat 1 tbsp oil in a large frying pan, add the garlic, breadcrumbs and zest and fry over a medium heat for 2-3 minutes, until the crumbs are golden. set aside in a bowl.
- 2 return the pan to the heat and add the remaining oil. when hot, add the tomatoes and chicken, reduce the heat and cook for 3-4 minutes.
- 3 add the broccoli to the pasta after 10 minutes of cooking time, boil for the rest of the cooking time then drain.
- 4 combine the pasta and tomato mixture, tossing in the parmesan. serve with the lemon and garlic crumb mixture sprinkled on top, and finish with a good sprinkling of black pepper.
