Stuffed Chicken Breast

Ingredients

  • Servings: 6
  • 6 boneless chicken breasts
  • 2 roasted red peppers, cut into strips
  • 6 slices fresh mozzarella cheese
  • 6 pieces sun-dried tomatoes
  • olive oil
  • salt
  • pepper
  • 1 fresh garlic clove, minced
  • italian style breadcrumbs
  • 1/2 cup parmesan cheese
  • 2 eggs
  • 1/2 cup milk

Recipe

  • 1 preheat oven to 400.
  • 2 in small sauce pan, add olive oil and the sun dried tomatoes, cook for 5 minutes or until tomatoes are plumped. save oil.
  • 3 flatten the chicken till even and about 1/4 inc thick. add a slice of mozzarella cheese, then strips of roasted peppers, and some sun dried tomatoes, roll up chicken and put a tooth pick through it.
  • 4 mix eggs and milk in flat bowl, and mix the bread crumbs an parmesan cheese, with salt and pepper in another shallow bowl. dredge the chicen first in the egg mixture the in the bread crumb mixture, contine till all pieces of chicken is coated.
  • 5 in a oven proof frying pan add the flavored oil, and saute the chicken till brown. it will not be ready yet. put in oven for another 30 minutes.
  • 6 serve with pasta marinara or anything you choose.
