Taboule Salad

Ingredients

- 1 (5 1/4 ounce) package near east taboule wheat salad
- 1 cup boiling water
- 2 -3 tablespoons olive oil
- 1 large tomato, chopped
- 1/4 cup fresh basil, chopped
- 1/2 bunch fresh parsley, chopped
- 1/2 red onions or 1/2 onion, diced
- 1/2 teaspoon minced garlic
- 2 tablespoons fresh lemon juice
- salt and pepper, to taste
- romaine lettuce leaf, if desired
Recipe
- 1 in large bowl, combine wheat salad mix and contents of spice sack. stir in 1 cup boiling water and oil. let stand 30 minutes.
- 2 stir in fresh basil, fresh parsley, onion, garlic, lemon juice, and salt (if desired).
- 3 fold in tomatoes.
- 4 cover; chill for at least 2 hours or overnight before serving.
- 5 serve as a side dish, a light lunch, or on a bed of romaine lettuce. sprinke with freshly ground pepper, if desired.
