Taboule Salad

Ingredients

  • Servings: 4
  • 1 (5 1/4 ounce) package near east taboule wheat salad
  • 1 cup boiling water
  • 2 -3 tablespoons olive oil
  • 1 large tomato, chopped
  • 1/4 cup fresh basil, chopped
  • 1/2 bunch fresh parsley, chopped
  • 1/2 red onions or 1/2 onion, diced
  • 1/2 teaspoon minced garlic
  • 2 tablespoons fresh lemon juice
  • salt and pepper, to taste
  • romaine lettuce leaf, if desired

Recipe

  • 1 in large bowl, combine wheat salad mix and contents of spice sack. stir in 1 cup boiling water and oil. let stand 30 minutes.
  • 2 stir in fresh basil, fresh parsley, onion, garlic, lemon juice, and salt (if desired).
  • 3 fold in tomatoes.
  • 4 cover; chill for at least 2 hours or overnight before serving.
  • 5 serve as a side dish, a light lunch, or on a bed of romaine lettuce. sprinke with freshly ground pepper, if desired.
