Ingredients

- 1 head cauliflower, separated into large florets
- 4 large tomatoes, diced
- 4 scallions, chopped
- 2 cloves garlic, minced
- 1 large cucumber, peeled and diced
- 2 cups sprouted wheat berries
- 1 cup italian parsley, chopped, stems removed
- 1/2 cup lemon juice, freshly squeezed
- 1/2 cup cold pressed extra virgin olive oil
- 1 teaspoon sea salt
Recipe
- 1 whisk together lemon juice, oil and sea salt and set aside.
- 2 pulse cauliflower in food processor until it resembles fine breadcrumbs.
- 3 transfer cauliflower to a large bowl and add remaining ingredients (including lemon/oil mixture) and mix well.
- 4 marinate for 20 minutes at room temperature, then serve.
