Thai Shrimp Kabobs

Total Time: 40 mins Preparation Time: 10 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 1 (14 ounce) can coconut milk
  • 1 1/2 teaspoons lime peel, finely chopped
  • 3 tablespoons lime juice
  • 1 1/2 teaspoons sugar
  • 1 1/2 teaspoons green curry paste
  • 1 1/2 teaspoons hoisin sauce
  • 1 teaspoon ginger, fresh, grated
  • 1 lb large shrimp, peeled, deveined
  • 2 -3 cups rice, cooked

Recipe

  • 1 in a small bowl, stir together milk, lime peel, lime juice, sugar, curry, hoisin, and ginger.
  • 2 place shrimp in a medium bowl.
  • 3 pour 1/2 cup of the milk mixture over the shimp.
  • 4 cover shrimp and refrigerate 30 minutes.
