Whole Wheat Italian Pasta Salad

Ingredients
- Servings: 4
- 2 cups dry whole wheat pasta
- 2 tablespoons extra virgin olive oil
- 1/2 cup chopped pepperoni
- 1/4 cup chopped onion
- 1 minced garlic clove
- 2/3 cup frozen peas
- 1/4 cup water
Recipe
- 1 boil pasta in salted water until al dente. drain and set aside.
- 2 heat 1t of evoo in a medium pan over medium heat. add pepperoni and cook until it becomes crispy.
- 3 then add the onion and cook for 2 minutes or until it becomes soft and translucent.
- 4 add garlic and cook for an additional minute and add the pasta.
- 5 add water and the peas and stir the pan.
- 6 cook until water is evaporated or absorbed and pour dish onto a large plate.
- 7 place in refrigerator to cool and top with remaining evoo before serving!
