Whole Wheat Italian Pasta Salad

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 cups dry whole wheat pasta
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup chopped pepperoni
  • 1/4 cup chopped onion
  • 1 minced garlic clove
  • 2/3 cup frozen peas
  • 1/4 cup water

Recipe

  • 1 boil pasta in salted water until al dente. drain and set aside.
  • 2 heat 1t of evoo in a medium pan over medium heat. add pepperoni and cook until it becomes crispy.
  • 3 then add the onion and cook for 2 minutes or until it becomes soft and translucent.
  • 4 add garlic and cook for an additional minute and add the pasta.
  • 5 add water and the peas and stir the pan.
  • 6 cook until water is evaporated or absorbed and pour dish onto a large plate.
  • 7 place in refrigerator to cool and top with remaining evoo before serving!
