Turkey Meatballs Arrabbiata

Ingredients

  • Servings: 8
  • 2 tablespoons pure olive oil
  • 1/2 cup sweet onion, finely diced
  • 3 garlic cloves, minced
  • 1 teaspoon hot pepper flakes
  • 1 tablespoon sugar
  • 2 tablespoons tomato paste
  • 2 (796 ml) cans diced tomatoes
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon oregano leaves
  • 1/2 cup chicken broth (30% less sodium)
  • 0.5 (280 g) package frozen extra lean ground turkey meatballs
  • 0.5 (450 g) package penne rigate
  • 1/4 cup fresh italian parsley, chopped
  • 1/4 cup shaved parmesan cheese

Recipe

  • 1 heat oil in large saucepan over medium heat. add onion and garlic and sauté , stirring frequently until lightly softened, 2-3 minutes. stir in hot pepper flakes and sugar, cooking for 10-20 seconds. add tomato paste, diced tomatoes, basil, oregano, broth and meatballs; bring to a boil. reduce heat and simmer 10-15 minutes.
  • 2 meanwhile, cook pasta according to package directions; drain and keep warm. gently stir pasta and parsley into sauce. garnish each serving with parmesan cheese.
