Whole Wheat Carrot Muffins

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • 1 1/4 cups whole wheat flour
  • 3/4 cup all-purpose flour
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon allspice
  • 1/4 teaspoon ginger powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/3 cup butter (melted) or 1/3 cup margarine (melted)
  • 1/4 cup brown sugar
  • 1/4 cup artificial sweetener (splenda)
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/2 cup applesauce
  • 2 1/2 cups grated carrots
  • 1/2 cup raisins (optional)

Recipe

  • 1 preheat oven to 375 f and prepare muffin tins with paper liners or cooking spray.
  • 2 combine first 7 ingredients in a large bowl.
  • 3 beat eggs in separate bowl, then add sugars, butter, apple sauce, and vanilla.
  • 4 add egg mixture to dry ingredients and mix until combined.
  • 5 fold in grated carrots and spoon batter into muffin tins.
  • 6 bake for 18-22 minutes or until toothpick inserted comes out dry.
