Whole Wheat Carrot Muffins

Ingredients
- 1 1/4 cups whole wheat flour
- 3/4 cup all-purpose flour
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon allspice
- 1/4 teaspoon ginger powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/3 cup butter (melted) or 1/3 cup margarine (melted)
- 1/4 cup brown sugar
- 1/4 cup artificial sweetener (splenda)
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup applesauce
- 2 1/2 cups grated carrots
- 1/2 cup raisins (optional)
Recipe
- 1 preheat oven to 375 f and prepare muffin tins with paper liners or cooking spray.
- 2 combine first 7 ingredients in a large bowl.
- 3 beat eggs in separate bowl, then add sugars, butter, apple sauce, and vanilla.
- 4 add egg mixture to dry ingredients and mix until combined.
- 5 fold in grated carrots and spoon batter into muffin tins.
- 6 bake for 18-22 minutes or until toothpick inserted comes out dry.
