Whole Wheat Bread

Ingredients
- 2 1/4 teaspoons active dry yeast
- 2 cups lukewarm water (between 100-115 degrees)
- 1/4 cup butter, softened (i use earth balance vegan buttery sticks)
- 1/8 cup molasses (i use brer rabbit black strap molasses)
- 1/4 cup honey
- 1 teaspoon salt
- 2 1/2 cups whole wheat flour
- 1 1/2 cups unbleached all-purpose flour
- 1/2 cup flax seed meal
- 1/2 cup vital gluten
Recipe
- 1 dissolve yeast in lukewarm water.
- 2 combine butter, molasses, honey, and salt in a large bowl. mix well.
- 3 add yeast mixture. stir. slowly add flours, flax and vital gluten while mixing.
- 4 turn onto lightly floured surface and knead until smooth and elastic.
- 5 place in a lightly oiled bowl and let rise until doubled, about an hour.
- 6 punch down to remove most of the volume. let rest a few minutes.
- 7 knead just to get dough back into a ball-shape and cut in half. shape both halves into loaves and place in greased pans.
- 8 let rise one hour.
- 9 bake at 375 degrees for 35-40 minutes.
