Whole Wheat Bread

Total Time: 3 hrs 5 mins Preparation Time: 2 hrs 30 mins Cook Time: 35 mins

Ingredients

  • 2 1/4 teaspoons active dry yeast
  • 2 cups lukewarm water (between 100-115 degrees)
  • 1/4 cup butter, softened (i use earth balance vegan buttery sticks)
  • 1/8 cup molasses (i use brer rabbit black strap molasses)
  • 1/4 cup honey
  • 1 teaspoon salt
  • 2 1/2 cups whole wheat flour
  • 1 1/2 cups unbleached all-purpose flour
  • 1/2 cup flax seed meal
  • 1/2 cup vital gluten

Recipe

  • 1 dissolve yeast in lukewarm water.
  • 2 combine butter, molasses, honey, and salt in a large bowl. mix well.
  • 3 add yeast mixture. stir. slowly add flours, flax and vital gluten while mixing.
  • 4 turn onto lightly floured surface and knead until smooth and elastic.
  • 5 place in a lightly oiled bowl and let rise until doubled, about an hour.
  • 6 punch down to remove most of the volume. let rest a few minutes.
  • 7 knead just to get dough back into a ball-shape and cut in half. shape both halves into loaves and place in greased pans.
  • 8 let rise one hour.
  • 9 bake at 375 degrees for 35-40 minutes.
