Zesty Chicken Alfredo

Ingredients

- 2 teaspoons grated lemon zest
- 1 teaspoon black pepper
- salt
- nonstick cooking spray
- 1 lb boneless skinless chicken breast halve (i pound to an even thickeness)
- 2 tablespoons lemon juice
- 1 teaspoon dijon mustard
- 16 ounces alfredo sauce (2 cups homemade even better)
- hot cooked pasta
Recipe
- 1 season with salt and rub equal amounts of lemon zest and pepper onto each side of the chicken breasts.
- 2 in a large non-stick skillet sprayed with cooking spray, saute chicken 4-5 minutes per side. remove from skillet and keep warm.
- 3 add lemon juice, mustard and alfredo sauce to skillet, and heat thoroughly.
- 4 serve sauce over hot, cooked pasta and chicken.
