St. Joseph's Feast Day Pasta

Ingredients
- Servings: 2
- 1/2 lb pasta
- 1/4 cup olive oil (or more)
- 1 large garlic clove, minced
- 1 tablespoon parsley, fresh, minced
- 1/2 cup coarse breadcrumbs
- 1/4-1/2 cup finely chopped walnuts or 1/4-1/2 cup pine nuts
- 1/4 cup grated parmesan cheese
Recipe
- 1 in a stockpot, cook the pasta in boiling salted water until al dente; drain and set aside.
- 2 in a saucepan, heat the olive oil and cook the garlic until golden brown in color.
- 3 add the parsley, bread crumbs and nuts.
- 4 simmer gently for 2-3 minutes.
- 5 add sauce to drained pasta.
- 6 sprinkle with parmesan cheese and serve immediately.
