Bean, Chicken And Goat Cheese Bowties

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb bow tie pasta
  • 2 boneless chicken breasts
  • 1 (28 ounce) can chopped tomatoes
  • 2 garlic cloves, minced
  • 1 onion, chopped
  • 1 tablespoon balsamic vinegar
  • 1 (15 1/2 ounce) can cannellini beans, drained
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • 4 ounces goat cheese
  • parmesan cheese (optional)
  • salt and pepper

Recipe

  • 1 cook pasta according to package directions.
  • 2 slice the chicken breast, sprinkle with salt and pepper and saute it until cooked through over medium heat. remove from pan.
  • 3 in same pan that chicken was cooked in, add the chopped onions and the garlic, saute on medium heat for about 2 minuets, until they soften. add the chopped tomatoes, chicken, beans, thyme, bay leaf and balsamic vinegar.
  • 4 cook for about 20 minuets. if the sauce looks to be to thick, add some pasta water to loosen it up. remove from heat.
  • 5 once pasta is cooked, add it to the saute pan with the chicken mixture. stir well. crumble the goat cheese and toss it with the pasta gently.
  • 6 serve with additional parmesan cheese if desired.
