Bean, Chicken And Goat Cheese Bowties

Ingredients

- 1 lb bow tie pasta
- 2 boneless chicken breasts
- 1 (28 ounce) can chopped tomatoes
- 2 garlic cloves, minced
- 1 onion, chopped
- 1 tablespoon balsamic vinegar
- 1 (15 1/2 ounce) can cannellini beans, drained
- 1 teaspoon dried thyme
- 1 bay leaf
- 4 ounces goat cheese
- parmesan cheese (optional)
- salt and pepper
Recipe
- 1 cook pasta according to package directions.
- 2 slice the chicken breast, sprinkle with salt and pepper and saute it until cooked through over medium heat. remove from pan.
- 3 in same pan that chicken was cooked in, add the chopped onions and the garlic, saute on medium heat for about 2 minuets, until they soften. add the chopped tomatoes, chicken, beans, thyme, bay leaf and balsamic vinegar.
- 4 cook for about 20 minuets. if the sauce looks to be to thick, add some pasta water to loosen it up. remove from heat.
- 5 once pasta is cooked, add it to the saute pan with the chicken mixture. stir well. crumble the goat cheese and toss it with the pasta gently.
- 6 serve with additional parmesan cheese if desired.
