Yummy Rice Pilaf

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 1 tablespoon butter
  • 1/3 cup orzo pasta
  • 2 scallions, thinly sliced (including tops)
  • 1 cup long grain rice
  • 1 (14 1/2 ounce) can reduced-sodium chicken broth
  • 1/2 cup water
  • salt
  • pepper

Recipe

  • 1 melt butter in medium sauce pan over medium high heat.
  • 2 add orzo and saute until golden brown.
  • 3 add scallions and saute quickly (a minute or so).
  • 4 add chicken broth, water, salt & pepper (to taste).
  • 5 bring to a boil.
  • 6 stir in rice.
  • 7 reduced heat to low.
  • 8 cover and cook for 17-20 minutes.
  • 9 i finished by adding a little extra butter and salt and pepper to taste.
