Yummy Rice Pilaf

Ingredients
- Servings: 4
- 1 tablespoon butter
- 1/3 cup orzo pasta
- 2 scallions, thinly sliced (including tops)
- 1 cup long grain rice
- 1 (14 1/2 ounce) can reduced-sodium chicken broth
- 1/2 cup water
- salt
- pepper
Recipe
- 1 melt butter in medium sauce pan over medium high heat.
- 2 add orzo and saute until golden brown.
- 3 add scallions and saute quickly (a minute or so).
- 4 add chicken broth, water, salt & pepper (to taste).
- 5 bring to a boil.
- 6 stir in rice.
- 7 reduced heat to low.
- 8 cover and cook for 17-20 minutes.
- 9 i finished by adding a little extra butter and salt and pepper to taste.
