Zesty Spanish Rice Low Fat

Ingredients

- 1 onion, chopped
- 1 (7 ounce) can salsa verde (i used herdez brand mexicana picante)
- 1/2 green pepper, chopped
- 2 small tomatoes, chopped
- 1 -2 garlic clove, minced
- 1 teaspoon olive oil
- 1 cup jasmine rice
- 1 cup water
- salt and pepper
- fresh cilantro, finely chopped
Recipe
- 1 1. heat the olive oil over medium-high heat in a deep frying pan.
- 2 2. saute rice until lightly browned.
- 3 3. add onion, green pepper, garlic, tomatoes, salsa verde and water.
- 4 4. simmer, covered until water is absorbed. (approximately 15 minutes).
- 5 5. fresh chopped cilantro may be added just before serving.
