Zesty Spanish Rice Low Fat

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 onion, chopped
  • 1 (7 ounce) can salsa verde (i used herdez brand mexicana picante)
  • 1/2 green pepper, chopped
  • 2 small tomatoes, chopped
  • 1 -2 garlic clove, minced
  • 1 teaspoon olive oil
  • 1 cup jasmine rice
  • 1 cup water
  • salt and pepper
  • fresh cilantro, finely chopped

Recipe

  • 1 1. heat the olive oil over medium-high heat in a deep frying pan.
  • 2 2. saute rice until lightly browned.
  • 3 3. add onion, green pepper, garlic, tomatoes, salsa verde and water.
  • 4 4. simmer, covered until water is absorbed. (approximately 15 minutes).
  • 5 5. fresh chopped cilantro may be added just before serving.
