Tomato And Basil Linguine

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 9 ounces fresh linguine
  • 1 bunch fresh broccoli, cut into florets
  • 4 plum tomatoes, seeded and chopped
  • 3 tablespoons red wine vinegar
  • 3 tablespoons olive oil
  • 3 scallions, chopped
  • 1/4 cup chopped fresh basil
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • grated parmesan cheese

Recipe

  • 1 in a large pot of boiling water, cook linguine and broccoli until just tender, 2-3 minutes; drain well and transfer to a large bowl.
  • 2 add remaining ingredients, except cheese, and toss with linguini and broccoli. serve warm or chilled with the cheese.
