Ingredients

  • 2 cups cracked bulgur wheat
  • 5 -6 firm ripe tomatoes or 5 -6 green tomatoes
  • 2 bunches fresh mint
  • 2 bunches fresh parsley
  • 1 bunch green onions or 1 bunch scallion
  • 5 -9 key limes, juice of
  • 1/4-1/2 cup olive oil (to taste)
  • salt and black pepper
  • tender lettuce leaf

Recipe

  • 1 soak the bulgur wheat in enough water to cover for 30 minutes. meanwhile finel chop the tomatoes, the parsley and mint and the green onions ( tender green and parts). drain the wheat and mix in a large bowl with the rest of the ingredients. let rest in the refrigerator so the flavor develops. serve with the lettuce leaves.
