Whole Wheat Pancakes

Ingredients
- 1/2 cup whole wheat flour
- 1/2 cup oat flour
- 1 tablespoon sugar
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1 teaspoon baking powder
- 1 egg
- 2 tablespoons applesauce
- 1 cup buttermilk
- chocolate chips (optional)
Recipe
- 1 preheat griddle to 300. scramble egg and mix in apple sauce. sift and add dry ingredients. pour buttermilk on top and mix by hand until lumps are mostly mixed. spray a light coat of non-stick spray on griddle. measure 1/3 cup of batter. if desired, add a few chocolate chips to each one, dabbing them into the batter to cover. cook until light brown (about 3 1/2 minutes on one side and 2 minutes on the other). flip carefully. continue to cook until the middle is done (do not overcook).
